Shore To Be A Good Time

The day is finally here!!! Time to head to the shore for 3+ days of deck dwelling, bike riding, boardwalk running, seafood eating, beach walking fun!

The weatherman is calling for some rain tonight and Saturday AM but Sunday and Monday look fantastic. I may not bring my laptop with me; I haven’t decided yet. If I don’t look out for a weekend recap early next week.

I spent last night listening to the thunder and packing everything up for this weekend. Last summer at the shore I was still eating meat and this summer I am not. I will definitely still be enjoying some fresh seafood, but I wanted to make sure I have plenty of options for other meals as well.

I packed a big bag of goodies to bring with me:

I have bananas, sweet potatoes, greek yogurt, Larabars, individual nut butter packets, oats, “B Thinks This Would Be Better Without Pistachios” cereal, and Quorn chicken patties. B’s parents always have lots of fruits and veggies and fun snacks so this bag of food should be more than enough for the long weekend!

I’ve realized while packing last night that I definitely need some additional summer dresses! I love dresses and skirts and would wear them every day if I had enough! Anyone have suggestions on where to find some cute, inexpensive fun dresses for work AND play??

In other news, I failed to mention earlier this week that I got out and did 6.5 miles on Kelly Drive last Saturday! It was an amazing day and I probably only RAN about 4 miles but walking those other 2.5 miles was the best idea. I got a chance to really look around and enjoy my surroundings. Usually when I run I am so focused on my running and breathing that I forget to “stop and smell the roses”. Well not to fear folks, I will make sure to do that this weekend! I love going for an early morning run on the boardwalk, before the shops are open and it is just you, other runners and the ocean. ❤

[me]&goji review

So as I mentioned the other day, this lucky girl was given the chance to create a customized cereal through [me]&goji. And create I did!!

I had heard about this company long before I started reading blogs but never could justify buying organic and customized cereal when I had plenty of options to choose from at the grocery store. Well, my friends, my opinion has changed.

At first I was overwhelmed by the number of different things I could add to my cereal – there are over 60 options! In the end I narrowed it down and my mix contains:

5-grain muesli, multi-grain flakes, cranberry, raspberry, pistachio and chia.

I was having trouble coming up with a name until B (who was sitting there watching me create) goes “that cereal would be good if there wasn’t pistachios in it. And so “B Thinks This Would Be Better Without Pistachios” was born!

As you saw the other day I had some of my new cereal with yogurt and fruit and it was delish. This morning I decided to have a “pumped up cereal bowl” that contained

  • 3/4 cup of “B Thinks This Would Be Better Without Pistachios”
  • 1 cup of soymilk
  • 1 medium banana
  • Crofters Superfruit

Such a great combo. I LOVE the nutty, grainy flavor of my cereal. It’s not a sweet cereal but the cranberry and raspberry add a slight sweet/tart burst of flavor throughout. The Crofter’s Superfruit didn’t hurt either 😉 .

Not only does [me]&goji have a great product, but they also have a great outlook on our environment and overall well-being. Their cereal capsules are 100% recyclable and they are very conscious on how their business effects the environment. Sounds like a win-win to me! You should definitely head over to their site to learn more about them.

I am enjoying my new cereal mix so much that I might have to get some for a certain person for a certain holiday in June (hope my Dad isn’t reading this!). If you are thinking about giving [me]&goji as a gift but aren’t sure what the recipient might like, you can always go with a gift certificate. The GC gets e-mailed right to you so you don’t have to rush around trying to find a gift.

I am really glad I had the chance to try and review this product. It is one I can definitely see myself purchasing in the future!

Gotta run, lots of work and packing to do, then I’ll be heading to the shore tomorrow!!! 24 hours until 4 days of freedom! CAN’T WAIT!

New Do

Morning!

Just wanted to pop in really fast and show you all my new haircut! Please excuse the awkward “I’m taking a picture but trying to look like I’m not because I’m in it” look. I was the only one around last night so it’ll have to do!

Ready to Race?

Ever since I finished Broad Street I knew I wanted to complete a 1/2 marathon. It isn’t so much IF but WHEN for me. There are two races coming up this year that I am considering but I feel conflicted. Let me explain. The Rock and Roll (ING) 1/2 marathon is in September and the Philadelphia 1/2 Marathon is in November. I know a lot of people running the 1/2 in September and would love to be a part of that race but I really can’t stand the thought of training and running 10-12 mile runs in the humid summer months. I want to know from you all out there–am I being a sissy? Do I need to toughen up and just go for it? I am nervous to commit and then not follow through. Advice needed!!

So today has been a great day of eats so far! I have not been on a BIG food shopping trip in about a month (ie – WF, TJ’s and Giant all in one day). Instead I have made a couple smaller trips for produce and almond milk. So I have a lot of produce to use up before the Shore this weekend!

This morning I had the usual CCBS — seriously can’t get enough!

For lunch I was definitely set on a salad and this is what I came up with

My salad had a romaine/spring mix base with 1/2 an avocado, carrot, red pepper, feta and hot sauce. I usually don’t use dressing, especially when I have awesome toppings like avocado to give my salad some Oomph!

I was also able to pack a late afternoon snack of plain Chobani, sliced strawberries and cereal.

Now that isn’t just ANY cereal you see. It is my very own creation from [me]&gogi! I was lucky enough to get to design  and name this cereal. I am so excited about and will have a full review later this week!

I’ve got to run; I am getting my hair cut tonight — SO. EXCITED. I have waited WAY too long to have it cut. I’ll post some pics tomorrow! Catching Up

Sorry to have gone MIA the past three days. I have been busy having fun and am just getting back into my routine. I will be back later this week with some good stuff, so no worries.

I was at a wedding on Saturday with B and we had a great time. Hope everyone enjoyed their weekends as well!

Kombucha Friday!

Hi my name is Stephanie and I just created the tastiest lunch ever, thanks to some inspiration from the Happy Herbivore! I had seen this recipe on her site earlier this week and really wanted to make it. Except there was a problem, I didn’t have any salsa on hand. Womp. So today I was at a loss for what to make at lunch and decided to put my own spin on HH’s wraps. For your viewing pleasure….

I am telling you-go make this right now. It was SO GOOD and so easy to prepare! I made my version by taking a cup of chickpeas and throwing them in a sauté pan with some salt, pepper, garlic and onion. I let that warm up for a bit and then added in a 1/2 cup of plain tomato sauce. Of course you can add other veggies or use the salsa the recipe calls for. Once it was warm I spooned it into my lettuce wraps (I used just three) and sprinkled some feta on top. YUMMMMM. Just believe me when I saw it was so tasty.

So not only did I create an awesome lunch, but I participated in today’s official (???) “Bike to Work Day” which is apparently part of National Bike Month. Who knew?!

Bike Month

I had seen information about it on Twitter and since I usually make Friday my walk-to-work day I decided to bike.  I figured it would be easy since I would get to work faster and not be walking in the scorching sun for 18 minutes. Uh, it was HARD. I guess I forgot to factor in that I can’t bike the same route I walk–which meant two hills I had to climb while wearing a backpack and jeans. Not so fun. But I definitely felt good once I got there!

Say hello to GT’s Cosmic Cranberry.I decided to give GT’s another try and was not disappointed. I really liked this flavor because it was tangy like the citrus flavor but had a hint of sweetness from the cranberry. I would definitely get this one again. One thing though….I know a lot of people get freaked out by the fungus floating around that you have to swallow. I have had no problems with it before – I don’t taste it or notice it when I swallow. Today though, when I opened the bottle there was a nice fungi strand attached to the cap!! I will admit it was GROSS and I freaked out for about a minute and then got over it 🙂 . Ohhh Kombucha I love you.

Quinoa Stuffed Red Peppers

Good Morning! It was so nice to wake up this morning and it wasn’t raining! Fingers crossed for a nice weekend! Last night the rain also held off and I was able to get in a 20 minute bike ride and completed one circuit of my DIY Boot Camp. It was not terribly fatiguing but I am glad I got some fitness in! Now on to some eats.

Last night I experimented and created a dinner that will definitely be made again and again. It started last week when I was cutting up a red pepper for lunch. I cut it a bit differently than I usually do and it made me think of what I could stuff into the pepper. Well it just so happens that I had all the ingredients already at home! So without further delay, I give you

Quinoa Stuffed Red Peppers

I started by making a batch of quinoa. I mixed equal parts liquid and grain, using organic vegetable broth and some garlic and oregano to start. I then chopped two carrots and tossed them in the pot. Once that came to a boil, I added in the grain. Then I reduced the pot to a simmer and covered it for about 15 minutes or until the quinoa had soaked up all the liquid and had a slight iridescence to it.

Now this is where you can get creative. I did not have many other vegetables on hand but you can add things such as mushrooms, tomato, celery, squash, etc. I love sweet and savory so I tossed about 3/4 cup of raisins into the pot.

Mix everything and let sit for about 5 minutes while you prep your peppers.

Make sure to wash your peppers off before cutting. Take a sharp knife and slice right across the top,  removing the inside seeds and “edges”. Give it another rinse and pat dry. You are now ready to stuff!

Start spooning the quinoa mix into the pepper. I also added some goat cheese (my favorite!) but B used feta and said it was good as well. We sprinkled it throughout as we stuffed the peppers. Fill to the top and place in a baking dish with sides (so it does not topple over).

Bake at 350 degrees for 15-20 minutes, letting the pepper become warm; its skin will start to wrinkle. At this point you should be ready to enjoy! I sautéed some spinach on the side and finished it with a dollop of plain Chobani.

Everything was fantastic. The pepper was warm but still had a slight crunch to it which is exactly what I wanted. The goat cheese was like a tangy surprise throughout the pepper. If you have never made stuffed peppers you should definitely try this recipe. It was an easy and delicious vegetarian meal!
